Skinny on Cheesecake

Hi my lovelies🙋

Today we are getting the skinny on cheesecake- yup, you read right, I said skinny and cheesecake in the same sentence😀 With this recipe, we can now have our (cheese) cake and eat it too🍰💃🏽

Cheesecake is so sinfully delicious, however laden with fat and calories🙈 As I have mentioned in previous posts, I have the sweetest tooth ever, and am on a mission to find and create delicious recipes of our favs but with waaaaay less fat and calories than the standard recipes.

This is a choc & vanilla marbled cheesecake and with the use of sugar free cookies, light cream cheese, fat free yoghurt, sugar free chocolate (opt) etc, the calories and fat are cut drastically and this little sweet number weighs in at only approx 160cals (without chocolate) and just about 220cals with chopped chocolate. With normal cheesecakes having hundreds of calories, this is a sweet surprise indeed and definitely worth a try:)

Crust:

10 sugar free fibre biscuits

30ml butter or coconut oil (melted)

Filling:

240g cream cheese

180ml buttermilk/ fat free yoghurt

2 egg whites

1/4C brown sugar

2Tbl flour

1Tbl lemon juice

1 Tbl vanilla extract

100g chopped sugar free chocolate (opt)

1Tbl Cocoa powder

Preheat oven to 175 degrees celcius. Line an 8X8 pan with foil.

Crush biscuits. Mix together the biscuits and melted butter for crust. Press in lined pan and bake for 6-8mins. Cool

Beat together cream cheese, buttermilk/yoghurt, egg whites, sugar and flour till creamy. Add lemon juice and vanilla. Divide mixture into 2 bowls. Leave 3/4 of the mixture in 1 bowl and transfer the other 1/4 into another bowl. To the 1/4 of mixture, add handful of chopped chocolate(if using) and the cocoa powder. Mix well. Pour out the vanilla mixture onto crust. Then dollop spoonfuls of the chocolate mixture on top of the vanilla layer. Then using a skewer or knife, create streaks to create a marble effect.

Bake for 20-25mins. Cool and then chill in refrigerator preferably overnight, till set.
