As Diwali (the Indian Festival of Lights), approaches, I continue to post a few of my favorite “go to”, fool proof sweetmeat recipes to make and enjoy with your loved ones.
I will (in following posts) be adding burfi (my absolute favorite), chocolate sooji balls recipes but for now I am doing my favorite coconut ice recipe. This recipe is so simple, a child could do it (a child really could;)). I love the richness of the condensed milk, with the subtle hints of the rose and cardomom that come through.
Ok, let’s get to the Diwali feast:)
400g condensed milk
350g dessicated coconut
Pink and green food color
1-2tsp cardomom powder
1/2-1tsp rose essence/water
Mix all ingredients (except food colors), together. Split mixture into halves. Color 1 half green and the other half, pink. Line a tray (20X20cm), with ghee (clarified butter) or grease proof paper. Spoon the green mixture onto the tray. Make sure it evenly spread out on tray. Pour over the pink mixture. Evenly spread out over the green mixture. Let coconut ice set and firm up ( if it’s not a very hot day you can leave covered, to set out side of refrigerator otherwise, set in fridge)
When firm, cut into squares. Voila- decadent coconut squares that are as easy to make as they are delicious to eat:)
