hi there loves…
Its been a whirlwind of a week already, and I am far from done 🙈 Between all of the jobs I have, trying to juggle everything, (in high heels, at that😉), including the upcoming launch of the online version of my magazine, Having time out and balance to/in my life is key. Making time to workout, prepare and eat healthy meals, going out/spending time with friends and family, meditating, shopping, me time &&&, are all so important to living a healthy, balanced life and definitely helps keep me grounded and hold on to my sanity.😛
My fitness routine is pretty simple – I swear by Zumba for a complete, head to toe, workout, while still having fun doing it. I love the energy of Zumba and the fact that you can do it wherever you are in the world- no fancy gyms, equipment etc required.
Then there is Yoga, a few times a week. I have found yoga so fantastic, not just for my body but my mind especially. I regard it as art of meditation , a chance to shut the world out and re-focus your mind. My absolute best, is outdoor yoga, be it at the beach, in the park, in my garden, being in /surrounded by, nature, for me, is the most therapeutic way to start (or end) my day.
Run, Baby, Run! Running (or even brisk walking for that matter), is another fantastic way to keep in shape. This includes, hiking, which is fast becoming my new all time favorite thing to do. Iv recently done the “lions head” and “silver tree” hikes in beautiful Cape Town, and it really was so exhilarating, makes you feel alive, and quite literally on top of the world, with the power to do anything you set you mind to (especially while hanging off one of those chains /ladders on/from the mountain 🙈😜👊🏼⚡️). Apart from all this, hiking burns an insane amount of calories , which is always welcome 🙌👏
Detoxing (or teatoxing, as is the case here), is becoming so popular around the world, and it is no wonder why. Ever so often, our bodies and our metabolisms need a boost/kickstart to get us going again and/or help with weight loss. I only do natural detox remedies etc and have found a few such options that work wonderfully for me. **see upcoming post for indepth teatox details, brands, results etc. **
And last, but certainly equally important, in my fitness routine/journey, of course, is diet. I have made no secret of the fact that I have an incredibly sweet tooth. I could happily live on ice cream, cookies and chocolate. Unfortunately that is not possible so I am forced to find alternatives that satisfy my sweet cravings yet are healthy and good for me. Eating breakfast (as we all know by now), is key to eating less throughout the day, weight loss etc, so with that in mind I try and eat clean (as clean as I can anyway), and finding healthy (er) breakfast recipes really helps me get my days started right without all the guilt and calories 😉
One of my favorite things to eat for breakfast, is pancakes. I loooove pancakes – blueberry pancakes, chocolate pancakes, Berry pancakes, lemon curd pancakes, cinnamon pancakes- the list goes on and on, u name it and ill eat it😜😋
My Choc Chunk Oatmeal pancakes are just the thing to whip up, on a lazy Sunday morning, when you want to indulge slightly without completely falling off the diet wagon 🤗 The chocolate in here melts when pancakes are being cooked, giving you great morsels of Choc goeeyness in each bite. I have also added mixed spice in here, which works so well with the chocolate and vanilla, with warm spicey notes of cinnamon, clove, cardomon etc. I use almond milk which is virtually fat free and low in calories and fat free yoghurt, also adding moisture without all the fat. You can replace the chocolate with fruit i.e. Raspberries, blueberries, apples etc, instead if you’re feeling extra good;) Ok enough talk, let get to it…
Choc Chunk Oatmeal Pancakes~ (Makes approx 14)
2C Whole Wheat Flour
1C Instant Oats
1- 1 1/2tsp mixed spice
4 egg whites
2C almond milk (low fat milk will also work)
4Tbl brown sugar
1/2C fat free vanilla yoghurt
1C Choc chunks
2tsp vanilla extract / 4tsp vanilla essence
Mix flour, oats, salt, baking powder and mixed spice, together. Separately, whisk together egg whites, milk, sugar, yoghurt and vanilla, till lump free and smooth. Add to dry ingredients. Stir together till just combined. Add chocolate (or fruit if preferred). Lightly stir together.
Heat griddle pan. Coat with cooking spray (or butter for a naughtier twist😈). Drop about 60ml of the batter onto hot griddle. Cook till bubbles begin to form and edges look slightly dry/cooked. Flip over and cook other side till cooked (approx 2mins). Repeat process till all the batter is finished.
Pancakes should be eaten warm. I love them with a little maple syrup, & a touch of cream, on those extra indulgent days, otherwise they are just as fabulous all on their own.
A few notes for you my loves :
You can, as Iv mentioned above, substitute fruit instead of the chocolate.
I love raspberries in these pancakes as well, and I have (and honestly would urge you to try) adding 1/2C of raspberries and 1/2C of chocolate. The combination, taste and textures are amazing and lower in calories, compared to all Choc, as well. BONUS!!! 💃🏽
Calories: I have added calorie info on all 3 pancake combinations, to give you a general idea of what the numbers look like 😀 Now you can happily have a few and have no guilt;)
chocolate pancakes: approx 156 cals each, 6g fat
rasberry pancakes: approx 81 cals, 1g fat
choc raspberry combo : approx 118 cals, 4g fat
